  1. Make the roux: in a large Dutch oven or heavy pot, whisk together the vegetable oil and flour over medium heat. Cook, whisking constantly, until it reaches the color of dark chocolate and smells deeply toasted and nutty, 25-30 minutes — lower the heat if it darkens too quickly, and start over if you see black flecks or catch a burnt smell.
