How it's cooked (9 steps)
- In a large bowl, combine the lamb, panko, egg, 2 cloves of the garlic, the grated onion, 2 tablespoons of the mint, 1 teaspoon of the cumin, the coriander, cinnamon, 1 teaspoon of the salt, and 1/4 teaspoon of the pepper. Mix gently with your hands just until combined; overworking makes the meatballs dense.
- Shape the mixture into 16 meatballs, about 1 1/2 inches wide (roughly 2 tablespoons each).
- Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat. Working in two batches so you don't crowd the pan, sear the meatballs until deeply browned on at least two sides, 5-6 minutes per batch; they won't be cooked through yet. Transfer to a plate.
- Reduce the heat to medium. Add the chopped onion to the drippings left in the pan and cook, stirring occasionally, until softened and lightly golden, 5-6 minutes.
- Stir in the remaining 2 cloves garlic and the remaining 1 teaspoon cumin; cook, stirring, until fragrant, about 30 seconds.
- Pour in the crushed tomatoes and chicken broth, and stir in the sugar, the remaining 1/2 teaspoon salt, and the remaining 1/4 teaspoon pepper, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Nestle the browned meatballs and any accumulated juices into the sauce. Cover, reduce the heat to low, and simmer gently until the meatballs are cooked through and register 160 F at the center, 15-18 minutes.
- Uncover and simmer 3-4 minutes more until the sauce has thickened slightly and coats the back of a spoon. Taste and adjust salt if needed.
- Scatter the remaining 1 tablespoon mint over the top and serve hot, spooned over rice or with warm pita.
