How it's cooked (7 steps)

  1. Heat the oven to 425°F and set a wire rack over a foil-lined baking sheet. Pat the drumsticks completely dry, then toss on the rack with the kosher salt, baking powder, and black pepper, arranging them in a single layer with space between each piece.
  2. Bake until the skin is rendering fat and turning pale gold, about 25 minutes.
  3. Meanwhile, in a small saucepan, whisk together the gochujang, brown sugar, soy sauce, rice vinegar, sesame oil, garlic, ginger, and water.
  4. Set the saucepan over medium heat and simmer, stirring often, until glossy and slightly thickened, 3 to 4 minutes; remove from heat and divide the glaze between two small bowls.
  5. Remove the drumsticks from the oven and brush each one generously with the glaze from the first bowl; return to the oven and bake until the glaze looks set and the edges just begin to char, 8 to 10 minutes.
  6. Brush with the glaze from the second bowl and continue baking until the drumsticks are deeply lacquered and register 165°F at the bone, 6 to 8 minutes more.
  7. Let the chicken rest 5 minutes, then transfer to a platter and scatter with the scallions and sesame seeds before serving.
