How it's cooked (8 steps)

  1. Heat the oil in a large Dutch oven or heavy pot over medium-high heat. Add the kielbasa in a single layer and sear until browned on both sides, 4-5 minutes total. Transfer to a plate.
  2. Reduce the heat to medium. Add the onion to the fat left in the pot and saute, stirring occasionally, until softened and lightly golden at the edges, 5-6 minutes.
  3. Stir in the garlic, caraway seeds, and smoked paprika; cook until fragrant, about 45 seconds. Add the tomato paste and cook, stirring constantly, until it darkens slightly, 1-2 minutes.
  4. Pour in 1/2 cup of the broth, scraping up any browned bits stuck to the bottom of the pot.
  5. Add the cabbage, carrots, potatoes, remaining broth, bay leaves, salt, and pepper, then return the kielbasa and any accumulated juices to the pot. Stir to combine.
  6. Bring to a boil, then reduce the heat to low, cover, and simmer until the potatoes are fork-tender and the cabbage is fully soft, 25-28 minutes.
  7. Remove the bay leaves and stir in the cider vinegar. Taste and add more salt if needed.
  8. Ladle into bowls and top with the dill.
