How it's cooked (10 steps)
- Heat the oven to 425F. Pat the chicken thighs dry with paper towels, then season all over with the salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat until shimmering. Lay the chicken skin-side down and sear undisturbed until deeply golden and crisp, 6-7 minutes.
- Flip the chicken and sear the second side until golden, 3-4 minutes, then transfer to a plate.
- Pour off all but 1 tablespoon of fat from the skillet, add the garlic, and saute over medium heat until fragrant, 30-45 seconds.
- Whisk in the honey, lemon juice, lemon zest, oregano, and chicken broth, scraping up the browned bits; bring to a simmer, 1-2 minutes.
- Nestle the chicken skin-side up back into the skillet, spooning some of the sauce over the tops.
- Transfer the skillet to the oven and roast until the chicken reaches an internal temperature of 165F and the sauce has reduced to a glaze, 18-20 minutes.
- Move the chicken to a platter and tent loosely with foil.
- Set the skillet over medium heat on the stovetop and whisk in the butter until the glaze is glossy and coats a spoon, 1-2 minutes.
- Spoon the glaze over the chicken, scatter with the parsley, and serve.
