How it's cooked (9 steps)

  1. Make the compound butter: in a small bowl, mash the softened butter with the capers, lemon zest, 1 tablespoon of the lemon juice, garlic, parsley, and 1/4 teaspoon of the salt until evenly combined.

  7. Flip and grill the second side until the flesh is opaque throughout and an instant-read thermometer reads 137-140°F at the center, 3-4 minutes more; it will carry over to a safe 145°F as it rests.
  8. Transfer the steaks to a plate and rest 5 minutes.
  9. Squeeze the remaining lemon juice over the steaks, top each with a coin of the chilled compound butter, and serve as soon as the butter begins to melt.
