How it's cooked (10 steps)
- Season the pork chops all over with the salt and pepper; let them stand at room temperature until the surface looks dry and the salt has drawn out and reabsorbed some moisture, 30-45 minutes -- this is what keeps the chops juicy through a hot grill.
- Meanwhile, combine the maple syrup and bourbon in a small saucepan and bring to a boil over medium heat; cook, stirring occasionally, until reduced by about half and thick enough to coat a spoon, 5-6 minutes.
