How it's cooked (8 steps)

  1. In a small bowl, whisk together the smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, and salt to make the blackening spice blend.
  2. Pat the catfish fillets completely dry with paper towels, then brush both sides of each fillet with 2 tablespoons of the melted butter.
  3. Press the spice blend firmly over both sides of the fillets until fully and evenly coated.
  4. Heat a grill to high (450-500°F) with the lid closed, 10 minutes; set a large cast-iron skillet on the grates and let it heat until just smoking, about 5 minutes more.
  5. Add the vegetable oil to the hot skillet and swirl to coat, then lay the fillets in the skillet without crowding.
  6. Sear undisturbed until a deep blackened crust forms on the first side, 3-4 minutes.
  7. Flip and sear the second side until blackened and the fish flakes easily with a fork and reaches 145°F in the thickest part, 3-4 minutes more.
  8. Transfer the fillets to a platter, drizzle with the remaining 2 tablespoons melted butter, and squeeze the lemon wedges over the top; season with a pinch more salt if needed, and serve immediately.
