How it's cooked (11 steps)
- Make the chipotle mayo first: in a small bowl, stir together the mayonnaise, lime juice, and 1 teaspoon of the adobo sauce. Cover and refrigerate until you're ready to serve.
- Pulse the oats in a food processor until they form a coarse meal, about 10 pulses. Transfer to a large mixing bowl.
- Add three-quarters of the black beans to the food processor with the onion, garlic, minced chipotles, the remaining 1 teaspoon adobo sauce, tomato paste, cumin, paprika, and salt. Pulse 8 to 10 times, until the mixture just holds together but still shows flecks of bean — stop before it turns smooth, or the patties will be pasty.
- Scrape the mixture into the bowl with the oats, add the egg and the remaining whole beans, and mix with your hands until evenly combined and no dry oats remain.
- Divide the mixture into 4 equal portions and pack each firmly into a patty about 3/4 inch thick — a tight pack now is what keeps the burger together on the grill.
- Set the patties on a plate and refrigerate, uncovered, for 20 minutes to firm up.
- Heat a grill or grill pan over medium-high heat, about 450°F. Scrape the grates clean and brush well with oil, then brush both sides of the chilled patties with the remaining olive oil.
- Lay the patties on the grill and cook undisturbed until deeply charred and releasing easily from the grates, 4-5 minutes.
- Flip with a wide spatula and grill the second side until charred and the patties are firm all the way through, 4-5 minutes more.
- In the final 2 minutes, set the split buns cut-side down on a cooler part of the grill and toast until golden, 1-2 minutes.
- Spread the chipotle mayo on both cut sides of the toasted buns. Build each burger with lettuce, a patty, and a little more mayo, and serve right away.
