How it's cooked (10 steps)

  1. Zest the lemon into a small bowl, then juice the lemon into the same bowl; set aside. Thinly slice the garlic and keep the sage leaves nearby — this dish moves fast once the gnocchi hits the pan.
  2. Bring a large pot of water to a boil and stir in half the kosher salt. Add the gnocchi and cook until they float to the surface and are tender all the way through, 2 to 3 minutes. Reserve 1/2 cup of the cooking water, then drain the gnocchi.
  3. Toss the drained gnocchi with 1 tablespoon of the olive oil so they don't stick together.
  4. Heat the remaining 2 tablespoons olive oil in a large nonstick or well-seasoned skillet over medium-high heat until shimmering. Add the gnocchi in a single layer and cook undisturbed until deeply golden and blistered on the first side, 3 to 4 minutes.
  5. Flip the gnocchi and cook until golden on the second side, 2 to 3 minutes more. Transfer the gnocchi to a plate and wipe out the skillet.
  6. Reduce the heat to medium and add the butter to the skillet. Cook, swirling occasionally, until the butter foams, then turns a nutty golden-brown and smells toasted, 2 to 3 minutes.
  7. Add the sage leaves to the browned butter and fry until they turn a darker green and crisp at the edges, about 30 seconds. Add the garlic and red pepper flakes and cook, stirring, until the garlic is fragrant and just golden, 30 to 45 seconds — pull the pan from the heat immediately if it starts to darken further, garlic burns fast.
  8. Return the gnocchi to the skillet along with 2 tablespoons of the reserved cooking water and toss to coat everything in the brown butter, adding a splash more water if the pan looks dry.
  9. Off the heat, add the lemon zest, lemon juice, and Parmesan; toss until the cheese melts into a light coating sauce. Season with the remaining salt and the black pepper to taste.
  10. Divide among plates, scatter with the parsley, and finish with extra Parmesan and a few of the crispy sage leaves on top.
