How it's cooked (8 steps)
- Combine the farro, vegetable broth, and 1/2 tsp of the salt in a medium saucepan. Bring to a boil, then reduce to a low simmer, cover, and cook until the farro is tender but still chewy, 25-30 minutes; drain off any excess liquid and set aside to cool slightly.
- While the farro cooks, toss the cucumber, cherry tomatoes, olives, and red onion together in a large bowl with the lemon zest.

- Whisk together the lemon juice, remaining 1 tbsp olive oil, remaining 1/2 tsp salt, and the black pepper to make a bright dressing.
- Add the cooled farro to the vegetable bowl, pour the dressing over, and toss to combine; fold in the parsley.
- Divide the dressed farro and vegetables among bowls, top each with the warm seared halloumi, and serve immediately while the cheese is still crisp.
