How it's cooked (8 steps)
- Preheat the oven to 425 F. Trim the leaves from the cauliflower head and stand it stem-side down on a cutting board; cut straight down through the core into four steaks about 1 inch thick, keeping the core intact so each steak holds together (save the loose outer florets for another use).
- Brush both sides of the steaks with 2 tablespoons of the olive oil, then season evenly with the salt, pepper, and garlic powder.

- While the steaks roast, make the chimichurri: in a medium bowl, stir together the parsley, oregano, garlic, extra-virgin olive oil, red wine vinegar, red pepper flakes, and the 1/4 teaspoon salt; let stand at room temperature so the flavors meld.
- Remove the skillet from the oven and let the steaks rest on a cutting board 2-3 minutes to firm up before serving.
- Transfer the steaks to plates, spoon the chimichurri generously over the top, and serve with the lemon wedges alongside.
