How it's cooked (9 steps)

  1. Pat the chicken cutlets dry, season both sides with the kosher salt and pepper, then dredge each piece in the flour, shaking off the excess.

  6. Stir in the heavy cream and bring to a gentle simmer. Whisk in the Parmesan a handful at a time until the sauce is smooth and coats the back of a spoon, 2 to 3 minutes.

  9. Remove from heat, scatter with the torn basil, and serve immediately over pasta, rice, or crusty bread.
