How it's cooked (11 steps)
- Bring a large pot of salted water to a boil. Cook 12 oz penne according to package directions until al dente, about 11 minutes; reserve 1 cup pasta water, then drain and set aside.
- While the pasta cooks, season the chicken cutlets on both sides with the kosher salt and black pepper.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear the chicken until deeply golden on the first side, 4-5 minutes, then flip and cook until the second side is golden and a thermometer reads 160F at the thickest point, 3-4 minutes more. Transfer to a plate to rest; carryover heat will carry it to a safe 165F.
- Reduce the heat to medium, add the remaining 1 tablespoon olive oil and the garlic to the same skillet, and saute until fragrant, about 45 seconds.
- Stir in the sun-dried tomatoes, Italian seasoning, and red pepper flakes; cook 1 minute to bloom their flavor.
- Pour in the chicken broth, scraping up the browned bits from the bottom of the pan, and simmer until reduced by half, about 4 minutes.
- Stir in the heavy cream and simmer until slightly thickened, 3-4 minutes.
- Reduce the heat to low and whisk in the parmesan a handful at a time until melted and smooth; keeping the heat low keeps the sauce from breaking.
- Add the spinach and stir until just wilted, 1-2 minutes.
- Slice the rested chicken and return it to the skillet with any accumulated juices. Add the drained pasta and a splash of the reserved pasta water, and toss over low heat until everything is coated and glossy, 1-2 minutes.
- Taste and season with more salt if needed. Plate and top with extra grated parmesan.
