How it's cooked (9 steps)
- Melt 2 tablespoons of the butter in a large, deep skillet or wide pot over medium-high heat. Add the mushrooms in a single layer and cook without stirring until deeply browned on the first side, 4-5 minutes, then stir and cook until browned all over and any liquid they release has evaporated, 4-5 minutes more.
- Season the mushrooms with 1/2 teaspoon of the salt and a pinch of the pepper, then transfer to a bowl and set aside.
- Melt the remaining 1 tablespoon butter in the same pot over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, 4-5 minutes, then add the garlic and cook until fragrant, 30 seconds.
- Add the orzo and toast, stirring constantly, until the edges turn golden and smell nutty, 2-3 minutes.
- Pour in the wine and cook, stirring, until fully absorbed, about 1 minute.
- Add the warm broth a ladleful (about 3/4 cup) at a time, stirring frequently and letting each addition absorb before adding the next, until the orzo is tender with a slight bite and the mixture is creamy, 15-18 minutes total.
- Stir the browned mushrooms and thyme leaves back into the pot and cook until warmed through, about 1 minute.
- Remove from the heat and stir in the Parmesan, heavy cream, remaining 1/2 teaspoon salt, and lemon zest until glossy and creamy; taste and adjust salt and pepper.
- Divide among bowls, top with extra Parmesan and a scatter of fresh thyme, and serve immediately while still creamy.
