  6. Add the crawfish tails, Cajun seasoning, and cayenne; stir to combine and simmer gently until the crawfish is heated through, 4-5 minutes — do not let it boil hard, or the crawfish turns rubbery.
  7. Stir in the shredded Monterey Jack cheese a handful at a time until melted and the sauce turns glossy, 2-3 minutes.
