How it's cooked (9 steps)
- Whisk the buttermilk and hot sauce together in a shallow dish. Add the catfish fillets, turn to coat, cover, and refrigerate to marinate, 20-30 minutes.
- Meanwhile, whisk the cornmeal, flour, salt, black pepper, paprika, cayenne, garlic powder, and onion powder together in a wide shallow dish until evenly combined.
- Lift each fillet from the buttermilk, letting the excess drip off, then press it into the cornmeal mixture on both sides until fully and evenly coated.
- Set the coated fillets on a wire rack and let them rest uncovered at room temperature so the crust sets, about 10 minutes.
- Pour the oil into a large cast-iron or heavy skillet to a depth of about 1/2 inch and heat over medium-high heat until it reaches 350 F; a pinch of cornmeal dropped in should sizzle immediately.
- Lay 2 fillets at a time in the hot oil without crowding the pan and fry until deeply golden and crisp on the first side, 3-4 minutes.
- Flip and fry until deeply golden on the second side and the fish flakes easily and reaches 145 F in the thickest part, 3-4 minutes more. Transfer to a wire rack and repeat with the remaining 2 fillets, letting the oil come back to 350 F between batches.
- Transfer the fillets to a clean wire rack set over a baking sheet and season immediately with a pinch of salt while still hot.
- Serve right away with lemon wedges for squeezing over the top.
