How it's cooked (9 steps)
- Preheat the oven to 400°F with a 10-inch cast iron skillet inside so it heats along with the oven, about 15 minutes.

- Add the garlic, chili powder, and cumin; cook, stirring constantly, until fragrant and slightly darkened, about 1 minute, to bloom the spices so they taste rounded rather than raw.
- Stir in the crushed tomatoes, kidney beans, beef broth, and 1 teaspoon of the salt. Bring to a boil, then reduce the heat to low, cover, and simmer, stirring occasionally, 25 minutes.
- While the chili's first simmer runs, whisk the cornmeal, flour, baking powder, sugar, and remaining 1/2 teaspoon salt together in a large bowl. In a second bowl, whisk the buttermilk, egg, and melted butter, then pour into the dry ingredients and stir just until combined — a few lumps are fine; overmixing makes the cornbread tough.
- Uncover the chili and continue to simmer, stirring occasionally, until thickened to a hearty, scoopable consistency, 15 more minutes.
- At the same time, carefully pull the hot skillet from the oven, add a pat of butter and swirl to coat the bottom and sides, then pour in the cornbread batter. Bake until the top is golden and a toothpick inserted in the center comes out clean, 20-22 minutes.
- Taste the chili and season with more salt if needed.
- Let the cornbread cool in the skillet 5 minutes, then cut into wedges. Ladle the chili into bowls and serve each with a warm wedge of cornbread alongside.
