How it's cooked (8 steps)

  1. Preheat the oven to 425 F. Pat the chicken pieces dry and season all over with 1 1/4 teaspoons of the salt and the pepper. Dredge each piece in the flour, shaking off the excess, and set aside on a plate.
  2. Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear the chicken skin-side down until deeply golden and crisp, 6-7 minutes, then flip and sear the second side until golden, 4-5 minutes more. Transfer the chicken to a plate.
  3. Reduce the heat to medium. Add the potato wedges cut-side down to the fat left in the pan and sear, undisturbed, until golden on the first side, 5-6 minutes.
  4. Add the garlic, oregano, and red pepper flakes to the potatoes and saute, stirring, until fragrant, about 1 minute.
  5. Pour in the wine, scraping up any browned bits from the bottom of the pan, and simmer until reduced by about half, 2 minutes. Stir in the broth and the remaining 1/4 teaspoon salt and bring to a simmer.
  6. Nestle the chicken pieces skin-side up on top of the potatoes so the skin sits above the liquid rather than in it — this is what keeps it crisp instead of steaming soft. Transfer the pan to the oven and roast until the chicken reaches an internal temperature of 165 F and the potatoes are fork-tender, 30-35 minutes.
  7. Remove the pan from the oven. Scatter the peas into the sauce around (not over) the chicken and let them warm through in the residual heat, about 2 minutes.
  8. Let the dish rest 5 minutes, then scatter with the parsley and serve family-style straight from the pan, spooning the pan sauce over each portion.
