How it's cooked (8 steps)
- In a large bowl, whisk together 2 tablespoons olive oil, garlic, lemon juice, cumin, smoked paprika, coriander, turmeric, cinnamon, and 1 teaspoon salt. Add the chicken thighs and turn to coat completely. Cover and refrigerate at least 1 hour, or up to overnight for deeper flavor.

- Flip the chicken and cook until the second side is browned and an instant-read thermometer inserted in the thickest thigh reads 165 F, 5-6 minutes more. Transfer to a cutting board and rest 5 minutes.
- Slice the rested chicken against the grain into thin strips, then toss the strips in the browned bits left in the skillet to pick up the pan flavor.
- Warm the pitas in the dry skillet over medium heat until pliable and lightly speckled, about 30 seconds per side.
- Spread each warm pita with a generous layer of the cucumber-yogurt sauce, then top with sliced chicken, sliced cucumber, red onion, cherry tomatoes, and pickles. Fold or roll to close and serve right away.
