How it's cooked (11 steps)
- Halve each chicken breast horizontally into two thin cutlets, then pound between plastic wrap to an even 1/2-inch thickness.
- Season the cutlets on both sides with 1 1/2 teaspoons of the salt and 1/4 teaspoon of the pepper, then dredge each piece in the flour, shaking off the excess.
- Heat 2 tablespoons olive oil and 1 tablespoon butter in a large skillet over medium-high heat; sear the cutlets in two batches until deeply golden on the first side, 3-4 minutes, flip and cook until the second side is golden and the chicken reaches 165°F, 2-3 minutes more. Transfer to a plate.
- Add the remaining 1 tablespoon olive oil to the skillet. Add the mushrooms in a single layer and cook without stirring until deeply browned on the bottom, 4-5 minutes, then stir and continue cooking until browned all over, 3-4 minutes more.
- Add the garlic and cook, stirring, until fragrant, about 30 seconds.
- Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan, and simmer until reduced by half, 3-4 minutes.
- Add the chicken broth and simmer until the sauce is reduced by about a third and lightly thickened, 5-6 minutes.
- Stir in the heavy cream and simmer until glossy, about 2 minutes.
- Return the chicken and any accumulated juices to the skillet, spoon the sauce over the top, and simmer until heated through and the chicken registers 165°F, 2-3 minutes.
- Remove the skillet from the heat and swirl in the remaining 3 tablespoons butter until the sauce is glossy; season with the remaining salt and pepper to taste.
- Scatter the parsley over the top and serve.
