How it's cooked (9 steps)
- Pat the cube steaks dry, then season both sides with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper; if the steaks aren't already pounded thin, pound them between sheets of plastic wrap to an even 1/4 inch.
- Whisk the buttermilk and egg together in a shallow dish; in a second shallow dish, whisk 1 1/4 cups of the flour with the garlic powder, smoked paprika, cayenne, the remaining 1 teaspoon salt, and the remaining 1/2 teaspoon pepper.
- Dredge each steak in the seasoned flour, dip in the buttermilk mixture, then dredge again in the flour, pressing to help the crust adhere; set the breaded steaks on a wire rack and let rest 10 minutes so the coating sets.
- Heat the oil in a large heavy skillet over medium-high heat until it reaches 350°F. Fry the steaks two at a time, 3 to 4 minutes per side, until deeply golden brown and the internal temperature reaches 160°F.
- Transfer the fried steaks to a wire rack set over a baking sheet and keep warm, uncovered, in a 200°F oven while you make the gravy.
- Pour off all but 3 tablespoons of the drippings from the skillet, keeping the browned bits in the pan; whisk in the remaining 1/4 cup flour and cook, whisking constantly, until golden and no longer smells raw, 1 to 2 minutes.
- Gradually whisk in the whole milk, scraping up the browned bits, and simmer, whisking often, until the gravy is thick enough to coat the back of a spoon, 5 to 6 minutes.
- Stir in the coarsely ground pepper and season with salt to taste, thinning with a splash more milk if the gravy is too thick.
- Plate the chicken fried steaks and ladle the peppered gravy generously over top; serve immediately.
