How it's cooked (10 steps)

  1. Bring a large pot of well-salted water to a boil. Add the linguine and cook until al dente, 9-10 minutes; before draining, reserve 1 cup of the starchy pasta water.
  2. While the pasta cooks, pat the shrimp dry and toss with the salt and pepper.
  3. Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Sear the shrimp until pink and just opaque, about 1.5 minutes per side; transfer to a plate.
  4. Reduce the heat to medium and add the remaining 1 tablespoon olive oil and the garlic to the skillet; saute until fragrant and pale gold at the edges, 45-60 seconds.
  5. Stir in the Calabrian chili paste and cook until it darkens slightly and smells toasty, about 30 seconds.
  6. Pour in the white wine to deglaze, scraping up any browned bits; simmer until reduced by half, 2-3 minutes.
  7. Lower the heat to low and whisk in the butter a few pieces at a time along with 1/2 cup of the reserved pasta water, until the sauce turns glossy and emulsified, about 2 minutes.
  8. Add the drained pasta to the skillet and toss to coat, splashing in more reserved pasta water as needed until the sauce clings silkily to the noodles, 1-2 minutes.
  9. Return the shrimp to the skillet along with the lemon zest and juice; toss gently to combine and warm through, about 1 minute.
  10. Remove from the heat and fold in the parsley and parmesan; season to taste with the remaining salt and plate immediately.
