How it's cooked (8 steps)
- In a large bowl or zip-top bag, combine the chicken, 2 cups of the buttermilk, hot sauce, and 1 tablespoon of the salt. Cover and refrigerate at least 8 hours or up to overnight, so the buttermilk tenderizes the meat and seasons it through.

- Season lightly with more salt while the chicken is still hot, so it sticks to the crust.
