How it's cooked (10 steps)
- Heat the oven to 375 F. Spread 1/2 cup of the enchilada sauce in a thin layer over the bottom of a 9x13-inch baking dish.
- Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until softened and turning translucent, 4-5 minutes.
- Stir in the garlic, cumin, and chili powder and cook until fragrant, about 1 minute.
- Add the black beans, corn, salt, and 1/2 cup of the enchilada sauce. Simmer, stirring often, until the mixture thickens slightly, about 5 minutes, mashing about a third of the beans against the side of the skillet with a spoon so the filling holds together.
- Remove the skillet from the heat and stir in 1 cup of the cheese until melted into the filling.
- Wipe out the skillet and heat the remaining 1 tablespoon oil over medium heat. Working in batches, warm each tortilla 10-15 seconds per side, just until soft and pliable, stacking them under a clean towel as you go so they stay warm.
- Spoon a scant 1/3 cup of the bean filling down the center of each tortilla and roll it up snugly. Arrange the rolled tortillas seam-side down, side by side, in the prepared baking dish.
- Pour the remaining 1 cup enchilada sauce evenly over the rolled tortillas, then scatter the remaining 1 1/2 cups cheese on top.
- Bake until the cheese is fully melted and bubbling and the sauce is bubbling at the edges, 20-25 minutes.
- Let the enchiladas rest 5 minutes, then scatter with cilantro and serve with sour cream and lime wedges.
