How it's cooked (9 steps)
- In a medium bowl, toss the sliced beef with the cornstarch and 1 tablespoon of the soy sauce until evenly coated; let sit at room temperature while you prep the vegetables, about 10 minutes.
- Bring a pot of water to a boil and drop in the udon noodles, stirring gently to separate the strands, until just loosened and heated through, about 2 minutes; drain and set aside.
- In a small bowl, whisk together the remaining 2 tablespoons soy sauce, the oyster sauce, mirin, and sesame oil; set the sauce aside.
- Heat 1 tablespoon of the vegetable oil in a large skillet or wok over high heat until shimmering. Add the beef in a single layer and sear undisturbed until deeply browned on the first side, 2 minutes, then flip and cook until just cooked through, 1 minute more. Transfer the beef to a plate.
- Add the remaining 1 tablespoon oil to the pan. Add the onion, carrots, and scallion whites and stir-fry over medium-high heat until the onion turns translucent and the carrots begin to soften, 3 minutes.
- Add the cabbage, bell pepper, garlic, and ginger; stir-fry until the cabbage wilts and the peppers are crisp-tender, 3 minutes.
- Add the drained noodles and the sauce to the pan; toss constantly with tongs until the noodles are glossy and heated through, 2-3 minutes.
- Return the beef and any accumulated juices to the pan; toss to combine and heat through, about 1 minute. Season with the kosher salt to taste.
- Divide among plates and top with the scallion greens.
