How it's cooked (10 steps)
- Pat the beef dry and season all over with the salt and pepper. Set the bacon in a large Dutch oven over medium heat and cook, stirring occasionally, until crisp and the fat has rendered, 6-8 minutes; transfer the bacon to a bowl with a slotted spoon, leaving the fat in the pot.
- Working in two batches, sear the beef in the bacon fat over high heat until deeply browned on all sides, 3-4 minutes per side; transfer each batch to the bowl with the bacon.
- Reduce the heat to medium, add the onion and carrots to the pot, and saute until softened, 5-6 minutes. Add the garlic and cook until fragrant, 30 seconds.
- Stir in the tomato paste and cook until it darkens slightly, 1-2 minutes. Sprinkle the flour over the vegetables, stir to coat, and cook until no raw flour remains, about 1 minute.
- Deglaze the pot with the red wine, scraping up the browned bits from the bottom, about 2 minutes. Return the beef and bacon to the pot along with the broth, thyme, and bay leaves, and bring to a simmer.
- Cover the pot and braise in a 325 F oven until the beef is fork-tender, 2.5 to 3 hours.
- Remove the pot from the oven and discard the bay leaves. Melt the butter in a large skillet over medium-high heat and saute the mushrooms until deeply golden, 6-8 minutes.
- Add the pearl onions to the skillet and cook, stirring occasionally, until heated through and lightly caramelized, 3-4 minutes.
- Stir the mushrooms and pearl onions into the stew and simmer uncovered until the sauce is glossy and slightly thickened, 8-10 minutes.
- Season to taste with additional salt and pepper, then serve hot over egg noodles or mashed potatoes.
