How it's cooked (11 steps)
- Season the beef chunks all over with the salt and black pepper.
- Heat the oil in a large Dutch oven over high heat until shimmering. Sear the beef in two batches, without crowding the pot, until deeply browned on all sides, about 8-10 minutes per batch; transfer to a plate as it finishes.
- Reduce the heat to medium. Add the onion to the drippings left in the pot and saute, scraping up any browned bits, until softened and lightly golden at the edges, 5-6 minutes.
- Add the garlic, minced chipotles and adobo sauce, tomato paste, cumin, and oregano. Cook, stirring constantly, until fragrant and the tomato paste darkens a shade, 1-2 minutes.
- Return the beef and any accumulated juices to the pot. Add the bay leaves and beef broth, and bring to a boil over high heat, 4-5 minutes.
- Cover, reduce the heat to low, and braise at a gentle simmer until the beef is fully tender and shreds apart with light pressure from a fork, 2 1/2 to 3 hours, checking for tenderness at the 2 1/2-hour mark.
- Transfer the beef to a large bowl and shred it into bite-size pieces with two forks, discarding any large pieces of remaining fat.
- Skim and discard the excess fat pooled on the surface of the braising liquid, and remove the bay leaves.
- Bring the braising liquid to a boil over medium-high heat and cook, uncovered, until reduced by about a third and lightly thickened enough to coat a spoon, 8-10 minutes.
- Return the shredded beef to the pot and stir in the lime juice and vinegar. Simmer 2-3 minutes to warm through and marry the flavors, then taste and season with more salt if needed.
- Ladle into bowls, scatter with the cilantro, and serve hot, with rice or warm tortillas alongside.
