How it's cooked (8 steps)
- In a medium bowl, toss the beef strips with the baking soda, 1 tablespoon of the soy sauce, and 1 teaspoon of the cornstarch until every piece is coated; let stand at room temperature until the surface turns slightly tacky, about 15 minutes. This is the velveting step that keeps the beef silky instead of chewy.

Stir-fry until just cooked through with no pink remaining, 30 to 45 seconds more, then transfer the beef to a plate.
- Add the remaining 1 tablespoon oil to the wok, then add the ginger and garlic; stir-fry until fragrant and just starting to turn golden at the edges, 20 to 30 seconds.
- Return the beef and any accumulated juices to the wok along with the drained snow peas. Pour in the sauce and toss constantly until it bubbles and thickens into a glossy coating on everything, 45 to 60 seconds.
- Season with the salt to taste and toss in the green onions; remove from the heat immediately so the peas stay crisp.
- Serve hot over the steamed rice.
