How it's cooked (10 steps)
- Season the beef cubes with 1 teaspoon of the salt. Heat 2 tablespoons of the oil in a large Dutch oven over high heat. Working in two batches to avoid crowding the pot, sear the beef, turning occasionally, until deeply browned on most sides, 7-8 minutes per batch; transfer to a plate.
- Reduce the heat to medium and add the remaining 1 tablespoon oil and the onions. Cook, stirring occasionally, until deeply golden and caramelized, 15-18 minutes.
- Add the garlic and ginger; cook, stirring, until fragrant, about 1 minute.
- Stir in the curry powder, cumin, turmeric, and cayenne; toast, stirring constantly, until fragrant, 30-45 seconds.
- Add the diced tomatoes, scraping up any browned bits from the bottom of the pot; cook, stirring occasionally, until the tomatoes break down and the mixture thickens slightly, 5-6 minutes.
- Return the beef and any accumulated juices to the pot.
- Add the broth and the remaining 1/2 teaspoon salt; bring to a boil, then reduce the heat to low, cover, and simmer, stirring occasionally, until the beef is fork-tender, about 1 hour 45 minutes.
- Add the potatoes and continue simmering, uncovered, until the potatoes are fork-tender and the gravy has thickened enough to coat the back of a spoon, 25-27 minutes.
- Stir in the garam masala and taste; add more salt if needed.
- Scatter with cilantro and serve hot.
