How it's cooked (8 steps)

  1. Heat the oven to 200°C. Melt the butter in a saucepan over medium heat, add the pine nuts and toast them 3 to 4 minutes, stirring, until they are the colour of straw and smell of resin.
  2. Add the rinsed rice and fry 2 minutes until every grain is coated and turning chalky white, then stir in the currants, cinnamon, allspice and black pepper.
  3. Pour in the hot stock, bring to a boil, cover and cook on the lowest heat for 12 minutes. Take off the heat, lay a cloth under the lid and let it stand 10 minutes, then fork through the dried mint. The rice should be slightly underdone — it finishes inside the bird.
  4. Season the cavity of the chicken with the black pepper already used and pack it loosely with the warm rice, leaving room for it to swell. Truss the legs tightly closed so nothing escapes into the salt.
  5. Mix the rock salt with the egg whites and the water, working it with your hands until it feels like wet sand that holds a shape when squeezed.
  6. Spread a 2 cm bed of the salt mix in a deep roasting tin, sit the chicken on it breast up, and pack the rest of the salt over and around it, patting firmly until the bird is completely entombed with no skin showing. Any gap will let steam out and the meat will dry.
  7. Bake 90 minutes. The crust will harden and go faintly tan. Let it rest 15 minutes out of the oven, then crack the crust open at the table with the back of a heavy knife and lift the chicken clear, brushing away any loose salt. The skin will be pale and soft — this dish is about the flesh, which is steamed in its own juice and seasoned exactly.
  8. Carve, spoon out the rice, and scatter everything with parsley.
