How it's cooked (8 steps)
- The bread is the engineering problem. A birote salado has a hard, almost brittle crust and a dense crumb, and it is the only roll that can be submerged in sauce and still be picked up two minutes later. A soft roll dissolves into soup.
- Char the tomatoes, white onion and garlic on a comal until blackened in patches and collapsing, 12 minutes.
- Blend them and simmer with the water, oregano and cloves 20 minutes into a thin, pourable tomato sauce. It should be barely spicy — this is the bath, not the heat.
- For the salsa brava, toast the chiles de árbol 15 seconds a side. Thirty árboles is not a misprint, and they scorch in the time it takes to answer the door; work in batches and pull them the moment they smell toasty.
- Soak them 20 minutes, then blend with the vinegar, cumin and salt into a thin, ferocious red salsa.
- Steep the sliced red onion in lime juice with a pinch of salt for 30 minutes until it softens and turns pink.
- Split the birote lengthwise without cutting all the way through, pack it with hot carnitas, and either dunk the whole thing in the warm tomato sauce or ladle it over until the roll is soaked through. Spoon the árbol salsa over to taste — media ahogada if you want it mild, bien ahogada if you do not — and top with the pickled onion. Eat it with a fork and no dignity.
