How it's cooked (8 steps)
- Mix the spices for the speculaaskruiden yourself and weigh them: the proportions are the recipe. Cinnamon dominates, clove and nutmeg sit behind it, and the white pepper is the note people cannot identify and would miss immediately — it is what stops the biscuit tasting like gingerbread.
- Combine the flour, brown sugar, spice mix, baking powder and salt in a bowl. Use real bruine basterdsuiker if you can get it; it is a soft, slightly moist Dutch sugar with a faint caramel note, and ordinary dark brown sugar is close but drier.
- Rub in the cold butter with your fingertips until the mixture is sandy, about 5 minutes, then add the milk and press the dough together into a firm block. Do not knead it.
- Wrap it and refrigerate 24 hours. This long rest is traditional and it is doing something real: the spices need time in a moist dough to bloom, and speculaas baked the same day tastes flat and floury by comparison. Two days is better still.
- Heat the oven to 170°C. Dust a carved wooden speculaasplank heavily with flour, press a piece of dough firmly into every part of the carving, level the back with a knife, and knock the shaped biscuit out onto a lined tray. If you have no mould, roll the dough 5 mm thick and cut it into rectangles.
- Press the flaked almonds firmly into the backs of the biscuits — speculaas met amandelen is the version sold in Dutch bakeries and the almonds toast against the tray.
- Bake 18 to 20 minutes, until the edges are firm and the kitchen smells strongly of clove. The biscuits will still feel slightly soft.
- Cool completely on a rack; they crisp as they cool and keep in a tin for two weeks, improving for the first few days.
