How it's cooked (8 steps)

  1. The roe is what makes it she-crab soup and not crab bisque. It is the orange egg mass of a mature female blue crab, and it does two things nothing else does: it thickens the soup with its own emulsifying protein and it gives the pale, faintly mineral sweetness that people recognise as Charleston. A soup without it is a perfectly good crab soup wearing the wrong name, and you should call it that.
  2. Sourcing is the honest problem. Harvesting roe-bearing sponge crabs is restricted in South Carolina waters, so most Charleston kitchens now buy frozen roe separately or substitute crumbled hard-boiled egg yolk, which is a texture substitute and not a flavour one. Frozen blue crab roe ships from Chesapeake and Gulf packers; order it, do not fake it.
  3. Melt the butter in a heavy pot over medium-low and cook the grated onion in it 6 minutes without letting it colour at all — this soup should stay ivory.
  4. Sprinkle over the flour and cook 3 minutes, stirring, to a blond roux that smells of biscuits and not of raw flour.
  5. Whisk in the milk in four additions, letting it thicken between each. Bring it to a bare simmer and cook 20 minutes on the lowest possible heat, stirring often. Do not boil it; the milk will break.
  6. Stir in the crab meat and the roe and cook 10 minutes more. Break the roe up against the side of the pot with a spoon so it disperses; it will tint the soup a pale coral.
  7. Season with the nutmeg, Worcestershire, salt and white pepper. Stir in the cream and warm 5 minutes without simmering.
  8. Add the sherry off the heat, or better, put a spoonful of sherry in each warm bowl and ladle the soup over it, which is how it is done in Charleston and keeps the sherry sharp. Finish with parsley and lemon zest.
