How it's cooked (7 steps)
- Pound the cassava leaves in a wooden mortar for 20 minutes until they collapse into a dark green paste. Ravitoto means 'pounded leaves' - the name is the method.
- Boil the pounded leaves in the water for 60 minutes. Cassava leaves must be pounded and boiled through before they are safe to eat; do not shorten this. Drain and press.
- Heat the oil in a heavy pot and brown the pork belly 12 minutes over medium-high heat until the fat has rendered and the edges are crisp.
- Add the onion, garlic and ginger and cook 6 minutes in the pork fat.
- Return the drained leaves to the pot with the pork and stew 45 minutes over low heat, stirring occasionally, until the leaves are dark and the pork is spoon-tender.
- Season with salt and pepper, then stir in the coconut milk and simmer 10 minutes for the version known as ravitoto sy voanio.
- Boil the rice 18 minutes. Serve the ravitoto with rice and chopped fresh chilli at the table.
