How it's cooked (5 steps)

  1. Cut the radish by hand into long even julienne. Use the bottom half of the root, which is peppery, for cooking and the top half, nearer the leaves, for this, because it is sweeter and less sharp raw.
  2. Toss the julienne with the salt and leave 10 minutes only. Squeeze lightly and pour off the water. Any longer and the radish goes limp, and this is a salad that lives on its crunch.
  3. Rub the gochugaru through the drained radish first, on its own, until every strand is evenly pink; a minute of this by hand is what gives musaengchae its even colour instead of red streaks.
  4. Add the vinegar, sugar, anchovy sauce and garlic and toss again, then fold in the scallions, sesame seeds and sesame oil.
  5. Let it stand 15 minutes before serving so the seasoning penetrates, and eat it the same day. Made without the vinegar it becomes the radish salad that goes inside a bowl of bibimbap; made with it, and eaten cold, it is the sharp counterweight on a table of rich grilled meat.
