How it's cooked (8 steps)
- Start the filling. Bring the rice and the 300 ml of water to a boil and cook 5 minutes, until the water has been absorbed. Add the milk, lower the heat to its gentlest setting and cook 40 minutes, stirring often, until you have a thick porridge that holds a furrow. Stir in the teaspoon of salt and let it cool completely — warm filling tears the thin crust.
- Mix the rye flour, plain flour, cold water and salt into a firm dough and knead it 5 minutes, until it is smooth and stiff. It should feel dense and slightly gritty; rye has almost no gluten, so this dough is worked for cohesion, not for elasticity. Wrap it and rest it 20 minutes.
- Roll the dough into a log, cut it into 16 pieces, and roll each piece out on a well-floured board into an oval about 15 cm long and as thin as you can get it — thin enough to read newsprint through is the traditional standard, and around 1 mm is realistic. Keep the ovals under a cloth as you go.
- Heat the oven as hot as it will go, ideally 275°C, with a baking sheet inside.
- Spoon about 2 tablespoons of cold rice porridge down the centre of each oval, leaving a 2 cm border. Fold the two long edges up over the filling so a band of rice shows down the middle, then crimp the exposed rye edge into tight pleats with wet fingers, working from one end to the other. This crimping is called rypytys and it is the whole visual signature of the pasty.
- Bake on the hot sheet for 12 to 15 minutes, until the crimped edges are blistered dark brown in places. They should look almost burnt at the pleats.
- Whisk the melted butter with the hot water and brush the pasties generously the moment they come out, then stack them in a bowl under a cloth for 10 minutes. The steam trapped under the cloth is what turns a crackly shell into the soft, pliable crust that karjalanpiirakat are supposed to have.
- Make the egg butter: mash the hard-boiled eggs to a fine crumb with a fork, beat in the soft butter and the salt, and serve it in a mound for spreading thickly over the warm pasties. Karelian pasties without munavoi are half a dish.
