How it's cooked (9 steps)
- Pound or blend the groundnuts to a coarse paste. Ifisashi is defined by this groundnut sauce - the greens are the variable, the groundnuts are not.
- Put the paste in a pot with the 500 ml water and simmer 15 minutes over low heat, stirring, until it loosens into a thin sauce and stops tasting raw.
- In a separate pan heat the oil and cook the onion 6 minutes over medium heat.
- Add the tomatoes and cook 6 minutes until soft.
- Add the shredded greens and green beans and turn them in the pan 5 minutes until wilted down.
- Tip the vegetables into the groundnut sauce and simmer 20 minutes over low heat, uncovered, until thick.
- Season with salt and chopped chilli.
- For the nshima, bring the 1.2 litres of water to the boil, stir in the maize meal in a steady stream and cook 20 minutes over low heat, working it stiff with a wooden spoon. Serve the ifisashi beside it.
- Substitutions: rape greens can stand in for the pumpkin leaves.
