How it's cooked (10 steps)
- Cut the fat into even 3 cm cubes, leaving a thin seam of meat on some of them. Pure fat gives you crisp but empty cracklings; the meat is what makes čvarci taste of something.
- Put the cubes in a wide heavy pot with the water and the bay leaves. The water keeps the bottom from scorching in the first half hour, before enough fat has run to cover everything, and then it boils away.
- Render over low heat for 2 hours 30 minutes. Do not hurry this. The cubes will shrink, sink and go pale, and clear fat will rise around them. Stir every 15 minutes or so with a wooden spoon.
- When the pieces have shrunk by half and the fat is clear, stir in the milk and the bicarbonate of soda. This is the Šumadija trick: the milk sugars brown the pieces evenly and the soda helps them puff instead of going hard.
- Raise the heat to medium and cook 20 minutes more, watching closely, until the čvarci float up, turn deep gold and stop hissing. That silence is the signal that the water in them is gone.
- Splash in the rakija off the heat, which lifts the smell and drives off the last moisture.
- Lift them out with a slotted spoon into a colander and let them drain 10 minutes, then press them lightly under a plate so they flatten and give up more fat.
- Toss while still warm with the salt and coarse pepper.
- Leave to cool and firm up an hour before eating. Serve with pogača, raw onion and rakija. The clear fat left in the pot is mast, the lard that will cook everything else in the house for a year, so strain it into jars.
- Substitutions: crusty white loaf (500 g) can stand in for the pogača.
