How it's cooked (9 steps)
- Pound or blend the large chillies, bird's eye chillies, garlic, ginger and shallots into a coarse paste. Leave it slightly textured; the gravy is meant to have body.
- Heat the oil in a very large wok over medium heat and fry the paste for 8 to 10 minutes, stirring, until it darkens and the oil separates and runs red at the edge.
- Add the taucheo and tomato paste and fry 3 minutes more, until the raw tomato smell turns sweet and jammy.
- Raise the heat to high, add the crab pieces and toss hard for 4 minutes until the shells have turned bright orange all over.
- Add the water, ketchup, tamarind water and sugar. Cover and cook 8 to 10 minutes, tossing once, until the crab meat is opaque and pulls cleanly from the shell. Taste the gravy now and balance it: sweet, sour, savoury and hot should all be audible, and the ketchup is not a shortcut, it is what the original vendors used and it is in the dish by right.
- Stir the slaked cornflour and dribble it in, stirring, until the gravy thickens enough to cling to the shells, about 1 minute.
- Turn the heat to low, pour the beaten egg in a thin stream across the surface and count to ten before stirring once, gently. You want ribbons and clouds of set egg suspended in the gravy, not a scrambled mess. Take the wok off the heat as soon as the egg has set.
- Scatter with spring onion and coriander and serve immediately with mantou for mopping. It is eaten with fingers and there is no dignified way to do it.
- Substitutions: light chicken stock can stand in for the water.
