How it's cooked (7 steps)
- Mix the white cornmeal, sorghum flour and yeast with 250 ml (1 cup) lukewarm water into a loose starter and leave it in a warm place for 1 hour, until it is visibly bubbling.
- Whisk the starter into the self-rising flour, the 50 g sugar and the salt, adding the litre of lukewarm water in stages so no lumps form. The finished batter should be thinner than pancake batter - closer to single cream.
- Cover and leave to ferment at room temperature at least 2 hours. For a more sour canjeero, give it 4 hours, or refrigerate the batter up to two days; the tang deepens each day.
- Heat a dry non-stick pan over medium heat. Ladle in about 80 ml of batter at the centre and immediately swirl the pan in a widening circle so the batter spreads itself thin.
- Cook 2 to 3 minutes without turning, until the surface loses its wet shine and is covered in fine open holes. Canjeero is cooked on one side only - flipping it kills the lace.
- Slide it out onto a plate and repeat, stacking the finished breads as you go.
- To serve at breakfast, brush a warm canjeero with melted ghee, drizzle over a little sesame oil and sprinkle with sugar, then roll it up. Alongside a stew, leave it plain and use it to lift the sauce.
