How it's cooked (3 steps)
- Braise the whole duck with onion, garlic, white wine, bay leaves, and cloves until very tender, then shred the meat and reserve the braising liquid.
- Cook rice in the seasoned duck broth until just short of done.
- Spread rice in a baking dish, layer duck and sliced chouriço on top, and bake at 200C for 20 minutes until the top layer is crispy and lightly golden.
